
The Pleasant Prairie Village Board approved alcohol license applications for Cooper’s Hawk Winery and Restaurant during its recent meeting. The approval marks another step toward opening the new restaurant, which is nearing completion at the southwest corner of State Trunk Highway 50 (75th Street) and 115th Avenue.
The approval includes a Class “B” Beer license, a Reserve “Class B” Intoxicating Liquor license, and an Outdoor Extension for the property at 7530 115th Avenue. The business will operate as Cooper’s Hawk Winery and Restaurant, with Corey Johnson serving as the appointed agent.
The restaurant will be about 12,759 square feet and includes a main dining room, two private dining rooms, bar seating, a main bar, a tasting bar, a retail area, and a kitchen. Indoor seating is planned for 272 guests. An outdoor dining area of about 842 square feet, enclosed by a decorative fence, will seat an additional 40 guests.
All application requirements were completed during the review process, including public notice, background checks, and required beverage server training. Final approval of the licenses depends on standard conditions, including payment of fees and issuance of an occupancy permit.
The development was approved in July 2025 as part of a multi-lot commercial project. Construction is progressing, with completion expected in May 2026.
